Yesterday was World Vegan Day, National Calzone Day and a bunch of other special days. Guess November 1 seems like a good day to celebrate.
Anyway, I figured I could combine vegan and calzone and celebrate with a tasty dinner. Only problem is that I have NEVER successfully made pizza dough. And I mean never! It has always been an unmitigated disaster in one way or another.
But since I’ve decided to conquer my cooking fears, I looked in my favourite cookbook – Google – for a vegan calzone recipe. After looking at a few, I chose this one from The Flaming Vegan site. Today is Lemon Meringue Pie Day. And it’s sunny, warm and really a perfect summer day. So why not try making a lemon meringue pie?
Now I’ve never made a real one… just a couple of those out of the box ones. And since we have drastically reduced our processed food consumption, that isn’t an option. So lemon meringue pie from scratch it is. (I did buy a pre-made pie crust. Making pie crust from scratch scares me! And since my local store had them on sale $1.25 for two shells, I probably saved money).
A search on the world wide
recipe book internet revealed 1000s of recipes. So which one to choose? Then I saw “Grandma’s Lemon Meringue Pie” with over 1,700 reviews and 4+ stars on allrecipes.com. Of course, a Grandma is going to have a great recipe. And it had simple ingredients and and easy to follow instructions.
Decision made, time to get into the kitchen and start baking. I generally prefer recipes that require one bowl, mix everything in and then dump everything in a pan and bake. Realizing that Grandma’s Lemon Meringue Pie would not be everything I hoped for with that method, I resolved to take my time and be patient with every step.
As I tasted the filling and then watched the meringue grow in my mixing bowl, my optimism increased that this may actually turn out to be something yummy and pretty!! Ten minutes of baking time later and presto – a mound of meringue and a tasty lemon pie underneath.
So thank-you Grandma, whoever you may be. You have a great recipe and one we will enjoy again!
